ALTER Cuvée: alcoholvrij, maar met de ambitie van een wijn
Achter ALTER zit een duidelijke filosofie: alcoholvrij hoeft geen kopie van wijn te zijn. Ina Simone Averhals en Alexander Scott Wingfield Jones bouwen hun cuvées daarom niet vanuit een bestaande wijn waarvan de alcohol achteraf wordt verwijderd. Ze vertrekken vanuit botanicals, fruit en onrijpe druiven en ontwikkelen daarmee een volledig eigen smaakarchitectuur. Zoals ALTER het zelf omschrijft: “Not the taste of wine, but the layered complexity.”
Die aanpak begint letterlijk in de bodem. ALTER teelt zijn eigen botanische ingrediënten in open veld en distilleert ze vervolgens alcoholvrij. Het doel is om de primaire en secundaire aroma's zo zuiver mogelijk te behouden. Voor Cuvée Pétillant Geranium vormt een Zuid-Afrikaanse variëteit van citroengeranium het aromatische hart. Daar komen verse rozemarijn, mediterrane kruiden en biologisch Frans eikenhout bij. De botanische distillaten worden vervolgens gecombineerd met witte steenvruchten en sap van onrijpe druiven. Een lichte carbonatie zorgt voor spanning en een wijnachtig mondgevoel.
Het resultaat is bewust geen alcoholvrije wijn in de klassieke betekenis. ALTER werkt zonder fermentatie en zonder dealcoholisatie. De makers proberen niet weg te nemen wat er in een wijn zit, maar juist iets nieuws op te bouwen: zuur, tannine, frisheid, kruidigheid en lengte. Fruit en onrijpe druiven vormen de basis; botanicals zorgen voor de complexiteit en structuur.
In het glas is Cuvée Pétillant Geranium dan ook opvallend gelaagd. Citroengeranium brengt een frisse citrusachtige toets, terwijl rozemarijn en andere kruiden voor een warmer, groen en kruidig karakter zorgen. Daartegenover staat exotisch fruit, met onder meer lychee, terwijl Frans eikenhout en fijne tannines voor een langere afdronk zorgen. De stijl is strak, droog en aromatisch.
Dat maakt de cuvée interessant aan tafel. ALTER ontwikkelde hem niet uitsluitend als alternatief voor een aperitief, maar als drank die ook gastronomisch kan worden ingezet. Denk aan groenten zoals asperges, venkel en artisjok, maar ook aan witte vis, schaal- en schelpdieren, gevogelte en gerechten waarin citrus, kruiden of olijfolie een belangrijke rol spelen.
Wat vooral blijft hangen, is het idee achter ALTER: de fles probeert niet te bewijzen dat je alcoholvrije wijn kunt namaken. De makers stellen een andere vraag: wat als je de principes van wijn — terroir, oogst, assemblage, balans, structuur en lengte — behoudt, maar het uitgangspunt volledig opnieuw bedenkt? Bij Cuvée Pétillant Geranium vertaalt zich dat in citroengeranium, mediterrane kruiden, Frans eikenhout, fruit en onrijpe druiven. Een eigen alcoholvrije cuvée dus, met een duidelijke gastronomische ambitie.

Behind ALTER lies a clear philosophy: alcohol-free does not have to be a copy of wine. Ina Simone Averhals and Alexander Scott Wingfield Jones therefore do not build their cuvées from an existing wine from which the alcohol is subsequently removed. Instead, they start with botanicals, fruit and unripe grapes, developing an entirely original flavour architecture. As ALTER puts it: “Not the taste of wine, but the layered complexity.”
That approach literally begins in the soil. ALTER grows its own botanical ingredients in open fields and then distils them without alcohol. The aim is to preserve the primary and secondary aromas as purely as possible. For Cuvée Pétillant Geranium, a South African variety of lemon geranium forms the aromatic heart. Fresh rosemary, Mediterranean herbs and organic French oak are added to the blend. The botanical distillates are then combined with white stone fruits and juice from unripe grapes. A gentle carbonation adds tension and a wine-like mouthfeel.
The result is deliberately not an alcohol-free wine in the traditional sense. ALTER works without fermentation and without dealcoholisation. Rather than trying to remove what is already present in wine, the makers aim to build something new: acidity, tannin, freshness, herbal notes and length. Fruit and unripe grapes form the foundation, while botanicals provide complexity and structure.
In the glass, Cuvée Pétillant Geranium is remarkably layered. Lemon geranium brings a fresh citrus character, while rosemary and other herbs add a warmer, green and spicy dimension. Exotic fruit, including lychee, provides contrast, while French oak and fine tannins contribute to a longer finish. The style is crisp, dry and aromatic.
This also makes the cuvée interesting at the table. ALTER did not develop it solely as an alternative to an aperitif, but as a drink that can also be used gastronomically. Think vegetables such as asparagus, fennel and artichoke, as well as white fish, shellfish, poultry and dishes in which citrus, herbs or olive oil play an important role.
What ultimately stands out is the idea behind ALTER: the bottle is not trying to prove that alcohol-free wine can be recreated. The makers are asking a different question: what if you retain the principles of wine — terroir, harvest, blending, balance, structure and length — but completely rethink the starting point? With Cuvée Pétillant Geranium, this translates into lemon geranium, Mediterranean herbs, French oak, fruit and unripe grapes. An alcohol-free cuvée in its own right, with a clear gastronomic ambition.
